Pulse dates in a food processor until they are chopped into small pieces.
Add the rest of the ingredients to the food processor with the chopped dates and pulse for 15 seconds. Scrape the sides of the bowl with a spatula and pulse again for 5-10 seconds until the ingredients are completely combined and a homogeneous grainy dough forms.
Scoop the dough with a tablespoon (or a cookie scoop) and roll with your hands to form 1 inch balls.
Refrigerate for at least an hour to let harden and set.
Store in the freezer for up to 2 months or in the fridge for 1 week.
